Flank steaks are cut from below the loin. Cuts from this area are lean, very flavorful, and best when braised or marinated and grilled. Flank steak has intense beefy flavor. Flanks steaks take to marinades very well, and some marinades can help to tenderize the meat. Cut the steak thinly across the grain and a flank steak can be quite tender.
